With the crazy heat of summer, I’ve been on a salad craze! Eating something cool yet refreshing for dinner is a great way to end a hot day! I’ve made every combindation of salads possible in the last few months! This salad is my #1 favorite and I keep coming back to it. The salmon gives a lot of extra flavorand the strawberry brings in the perfect fruity tones. Hope you enjoy it as much as I have!
Lemon Dill Salmon & Strawberry Salad
Prep and cook time: 30 mins
1 pound of salmon
2 tablespoons of lemon dill spice rub
2 cups of arugala
1 box of grape tomatoes
1 box of strawberries
5 oz of goat cheese
4 green onions
1/4 cup of walnuts
Your dressing of choice! I love this Zoe’s kitchen one!
4 slices of baguette or bread of choice!
- Add lemon dill spice rub to salmon and bake for 20 minutes at 400F.
- Mix together arugala, tomatoes, halved strawberries, diced goat cheese, and walnuts. Top with your favorite dressing.
- Serve with green onions and a slice of toasted or baked bread on the side.
